It’s Game Week!

The star to the game larder is Venison. This lean, game meat has a deep colour and rich flavour. Chose a haunch, side, saddle or shoulder. Venison is versatile in the kitchen and offers a great festive alternative to the ubiquitous turkey. It teams well with the Christmassy flavours of spiced red wine, cranberry sauces and robust mustardy sauces.  A rack of venison is a great centrepiece to any festive table and is kind to the cook.
