Our top marinades for the summer BBQ season
What better way to celebrate the lighter and warmer evenings than to eat alfresco.
Here are some of our favourite marinades for the summer BBQ season - perfect on our venison steaks, chops, t-bones, cutlets and even loins to give the meat a little extra twist.
Just choose your favourite venison marinade, mix the ingredients together, pour over your meat and leave for at least two hours (more if possible – the longer the better) before cooking.
Italian
60ml vinegar (red wine, white wine or cider works well)
180ml olive oil
1 teaspoon mustard
1 garlic clove, crushed
1 tablespoon Italian herbs (mixed, oregano etc)
Teriyaki
120ml sake
120ml mirin – Japanese sweet wine
6 tablespoons soy sauce
1 tablespoon sugar
Tex Mex
1 shot of tequila
60ml lime juice
60ml olive oil
1 teaspoon salt
1 teaspoon black pepper
¼ teaspoon ground cumin
25g chopped coriander
1 finely chopped chilli
120ml tomato based sauce like ketchup
1 chopped red onion
Southern BBQ
½ an onion, grated
120ml American style mustard
85g brown sugar
120ml cider or white wine vinegar
2 teaspoons cayenne pepper
2 tablespoons soy sauce
1 tablespoon Worcestershire sauce
120ml tomato based sauce or ketchup
Greek
60ml lemon juice
180ml olive oil
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon dried oregano
Grated zest of a lemon
