Smoked Venison with melon salad
A great starter for the summer months using melon to compliment our delicious smoked venison. This combination has been adapted from the recipe by Barney Desmazery on the BBC Good Food Website.
- Whisk together the dressing ingredients with a tiny pinch of salt and then set aside. Using a large melon baller or spoon (alternatively you can cut the melon into small chunks), scoop out the melon into a bowl. Cut the strips of smoked venison into thinner strips and arrange on 2 plates in a petal fashion, placing the melon balls around the venison but leaving a space in the middle for the salad.
- Toss the watercress and cucumber together in a bowl and then gently place a mound of this into the centre of the venison and melon and drizzle everything with the dressing. Serve immediately.
