Boned and rolled and perfect for braising or pot roasting our wild venison shoulder is packed full of that distinct gamey flavour and is the perfect cut for slow cooking because it’s lean meat and tasty muscles respond perfectly to a slow braise. Each joint can be bought in either 1kg or 500g.

Cooking tips:
These can be cooked like a roast or slowly with some liquid to stop it drying out. So first make deep slits with a knife and insert sticks of butter, margarine or solidified olive oil to keep it moist and then brown the joint. Place in a dish with some liquid (water, wine, ale or orange juice) and braise 170¼c/ 325f/Gas Mark 3 for 2 – 2_ hours, basting frequently. The fat will come out of the meat during cooking leaving it moist. Skim off the fat and youÕll have some superb gravy!Ê
